Caviar is one of the most delicate and perishable foods you can order. It's a raw, minimally processed product, which means that keeping it cold from the moment it leaves our facility to the moment it reaches your door isn't just a nice-to-have — it's essential to preserving its texture, flavor, and safety. Even a short lapse in temperature during transit can affect the quality of the roe.
That's why every single shipment we send includes a Freshtag™ temperature indicator. This small but important label travels alongside your caviar and gives you an easy, at-a-glance way to confirm that your order stayed within a safe temperature range the entire time it was in transit.
Where to Find It
The Freshtag™ indicator is attached directly to the small bag holding your caviar, and that bag always sits inside the insulated packaging your order ships in. So when you open your delivery, look inside the insulated bag for the small caviar pouch — the Freshtag™ label will be right there.
How to Read the Indicator
Once you've located the Freshtag™, check its color as soon as your order arrives:
Green or Yellow — Your order stayed within the optimal temperature range during transit. It's fresh and safe to enjoy.
Red — This means the temperature may have exceeded the safe range at some point during shipping. If you see red, please take a quick photo of the label and contact us right away so we can make it right.
Why It Matters
Temperature control is the single biggest factor in keeping caviar fresh from our facility to your table. The Freshtag™ gives you — and us — a transparent, reliable way to verify that cold chain was maintained throughout the journey, so you can enjoy your order with complete confidence.
If you ever have questions about your Freshtag™ reading or your delivery, don't hesitate to reach out to our team.

Caviar has long been considered one of the world’s most luxurious delicacies. Made from the roe of sturgeon fish, this prized treat has captivated chefs, enthusiasts, and gourmands for centuries. But not all caviar is the same — each type offers its own flavor, texture, and experience. If you’re exploring the world of sturgeon caviar, this guide will walk you through the most well-known varieties, from the rare and prestigious to the more approachable options.
Beluga Hybrid Caviar
Beluga Hybrid Caviar comes from a cross between the legendary Beluga sturgeon (Huso huso) and the Baerii sturgeon (Acipenser baerii).Known for its large, light-colored pearls and exceptionally smooth, buttery taste, this is the caviar many consider the pinnacle of luxury. Its delicate, slightly nutty notes and lingering sweetness make it one of the most sought-after types on the market.Because of its rarity and remarkable flavor, Beluga Hybrid remains the most expensive caviar, often reaching thousands of dollars per pound.
Osetra Caviar
Osetra caviar is one of the most celebrated types, known for its complex, nutty, buttery flavor and firm, medium-to-large pearls.Eggs range from golden brown to deep brown, and some rare batches even produce striking golden hues.Osetra’s depth of flavor and versatility place it among the world’s most prized caviars, with prices ranging from several hundred to several thousand dollars per pound depending on grade and origin.
Siberian Sturgeon Caviar
Siberian Sturgeon Caviar, sourced from Acipenser baerii, offers a mild, slightly sweet, nutty flavor. Its medium-sized eggs range from light to dark gray and are known for their smooth texture. While still a high-end product, Siberian caviar is more affordable than Beluga Hybrid, Osetra, or Sevruga, making it a favorite among chefs and everyday enthusiasts alike.
Kaluga Hybrid Caviar
A hybrid of the Kaluga sturgeon (Huso dauricus) and Amur sturgeon (Acipenser schrenckii), Kaluga caviar is often considered the closest alternative to Beluga. It features large, dark pearls and a rich, creamy taste with subtle earthy and nutty undertones.Kaluga Hybrid offers a luxurious experience at a slightly lower price than top-tier varieties, making it popular among those seeking premium quality without the Beluga price tag.
Sevruga Caviar
Sevruga caviar comes from the Acipenser stellatus sturgeon and is cherished for its briny, bold flavor and firm texture. Its eggs are smaller—typically gray to black—and its taste is more pronounced than some of the creamier varieties.Although still considered high-end, Sevruga is less costly than Beluga Hybrid, making it a popular choice for those seeking premium quality at a more accessible price point.
Hackleback Caviar
Hackleback caviar comes from the wild American Hackleback sturgeon (Scaphirhynchus platorynchus). It boasts a mild, nutty flavor and small, jet-black eggs with a pleasantly firm texture. As one of the most affordable caviars, Hackleback is an excellent entry-level option and a great way to experience sturgeon caviar without the high cost.
Final Thoughts
From the buttery elegance of Beluga Hybrid to the approachable charm of Hackleback, each variety of sturgeon caviar offers a unique sensory experience. Whether you’re seeking the rarest, most luxurious pearls or exploring more affordable alternatives, the world of caviar has something to offer every palate. No matter which type you choose, caviar remains a timeless delicacy—one to savor slowly and appreciate with every bite.

When it comes to enjoying Wild Alaskan Salmon Roe, maturity level plays one of the most important roles in determining...
When it comes to enjoying Wild Alaskan Salmon Roe, maturity level plays one of the most important roles in determining quality, texture, and flavor. Salmon roe is a natural delicacy, but not every harvest produces the same result. The maturity of the eggs defines how they look, taste, and feel in your mouth, making it the key factor in grading.
What Is Salmon Roe Maturity?
The maturity of salmon roe refers to how fully developed the eggs are at the time of harvest. Perfectly matured eggs have just the right balance of firmness and delicacy. They should be plump, glossy, and uniform in appearance. When eaten, the pearls should hold their shape but gently give way under slight pressure, releasing a fresh burst of briny, ocean flavor.
First-Grade Salmon Ikura
For salmon roe to be classified as first-grade salmon ikura, it must reach the ideal maturity level. This means the eggs are neither too soft nor too hard. Perfectly matured caviar offers the signature experience connoisseurs seek: a pearl that bursts pleasantly in the mouth when gently pressed, releasing clean, rich flavor with no bitterness.
Why Maturity Matters
Texture: Undermatured roe can be too fragile and watery, while overmatured eggs may taste dry or overly firm.
Flavor: The ideal maturity enhances the natural sweetness and brininess of salmon roe without overpowering the palate.
Presentation: Mature roe has a vibrant, glossy appearance that makes it visually appealing in dishes or served on its own.
The Mark of Quality
When choosing Wild Alaskan Salmon Roe, selecting first-grade caviar ensures you’re experiencing salmon roe at its very best. This is the level of maturity that delivers the luxurious, melt-in-your-mouth sensation that has made salmon caviar beloved around the world.

Located in the heart of Moldova, Aquatir Sturgeon Farm is one of the world’s most advanced and environmentally responsible producers...
Located in the heart of Moldova, Aquatir Sturgeon Farm is one of the world’s most advanced and environmentally responsible producers of premium sturgeon caviar. With a sprawling facility covering 170,000 square meters, a full-cycle aquaculture system, and a passionate team of specialists, Aquatir sets the global standard for modern, ethical, and sustainable caviar production.
A Leader in Aquaculture Innovation
Aquatir’s strength lies in its seamless blend of state-of-the-art technology and classical caviar craftsmanship. The farm operates a recirculating aquaculture system (RAS)—a highly controlled environment where water quality, oxygen levels, and temperature are continuously monitored and optimized. The system uses clean, filtered water from deep artesian wells, ensuring a safe and healthy environment for the sturgeon from hatch to harvest.
Each fish at Aquatir is raised with the utmost care and respect. Monitored individually with health passports, they undergo regular evaluations including ultrasounds, visual inspections, blood tests, and weight checks—ensuring both animal welfare and product consistency.
From Egg to Excellence: A Full Technological Cycle
One of Aquatir’s defining features is its full-cycle production, meaning the farm manages every stage of the sturgeon’s life—from fertilized egg to mature fish producing caviar. This closed-loop system allows for complete quality control, sustainability, and traceability.
Fries are divided into two categories: one group raised to produce high-grade caviar, and another dedicated to broodstock replenishment. The company also plays an active role in conservation, working with the Institute of Zoology of the Republic of Moldova and CITES to restock native sturgeon populations. Over 50,000 Russian sturgeon fries have already been released into the Dniester River.
Premium Caviar, Produced with Integrity
Aquatir’s commitment to quality is evident in every step of their caviar production. The company uses only salt—no preservatives, GMOs, antibiotics, or hormones—to enhance the natural flavor of the roe. Salting levels are tailored to consumer preferences, typically between 2.5% and 5%, while preserving the authentic taste and delicate texture of wild sturgeon caviar.
What makes Aquatir’s product especially unique is their strict policy of not mixing roe from different fish. Caviar is sorted by color and grain size to maintain the natural character of each batch. Every tin is hermetically sealed and stored in specialized refrigeration to maintain ideal freshness.
Science-Driven, Quality-Guaranteed
Aquatir has implemented rigorous food safety and quality systems, including ISO 9001:2008 and ISO 22000:2005, validated through multiple certification audits. The farm also operates its own accredited laboratory, performing advanced microbiological and physicochemical testing to ensure every batch meets international standards.
Each production stage—raw materials, packaging, and finished product—is subject to strict veterinary and sanitary control. This ensures not only compliance but a genuine commitment to product integrity.
The People Behind the Perfection
Behind Aquatir’s success is a team of dedicated aquaculture experts, whose passion and knowledge drive the company forward. The farm’s specialists constantly explore new techniques, improve sustainability, and refine traditional methods to deliver a caviar experience rooted in excellence, ethics, and innovation.
Aquatir: More Than a Brand—A Benchmark in Caviar Production
From its advanced facilities to its deep respect for nature and tradition, Aquatir is redefining what it means to produce world-class caviar. Founded in 2008, PANCAVIAR Sturgeon Farm has grown into one of the most respected names in the world of aquaculture...
Founded in 2008, PANCAVIAR Sturgeon Farm has grown into one of the most respected names in the world of aquaculture and premium caviar production. With a focus on sustainability, natural practices, and unmatched product quality, PANCAVIAR stands apart from the large-scale aqua farms that dominate the market. The company’s mission is ambitious yet deeply human: to help every person become a healthy long-liver.
Where Innovation Meets Nature
What sets PANCAVIAR apart isn’t just the scale—it’s the philosophy. Owning one of the largest sturgeon broodstocks in the world, PANCAVIAR operates across more than 300 hectares in Georgia, Caucasus, one of the most ecologically pure and naturally beautiful regions on Earth. Their eco-farms are strategically placed in pristine environments and rely exclusively on flowing mountain water enriched with oxygen—not on recirculating systems where fish feed and relieve themselves in the same water.
Two of the company’s flagship facilities showcase this commitment:
The Admiral Complex: Located 35 km from Tbilisi in the Kvemo Kartli region, this facility draws water from the meltwaters of Lake Algeti, surrounded by national reserves. Here, cold-water fish such as salmon and trout thrive alongside premium sturgeon, contributing to the production of high-grade salmon and sturgeon caviar.
The Rion Sturgeon Factory: Situated on a washed island in the Rioni River near Kutaisi, this factory is a one-of-a-kind sturgeon breeding site. It houses rare species such as Black Sea beluga, Persian sturgeon, Russian sturgeon (Colchis form), and even the Atlantic sturgeon—once considered extinct in many parts of the world. The water comes directly from the Rioni River, supplemented by artesian wells providing 100 liters per second of fresh water.
Purity in Every Pearl
At PANCAVIAR, quality starts at the source. The fish are raised in crystal-clear, flowing river water and fed biologically pure, extruded feed certified to the highest global standards. No hormones, growth stimulants, antibiotics, preservatives, emulsifiers, or stabilizers are ever used—ensuring that every bite of caviar is as close to nature as possible.
Unlike some large-scale producers, PANCAVIAR uses only the permitted amount of salt during processing and follows strict veterinary and sanitary controls for every batch. The result is a truly eco-friendly, safe, and natural product that stands out in both flavor and integrity.
To guarantee consistent safety and quality, our company has implemented comprehensive product safety standards in accordance with ISO 22000:2018, which have been revalidated through multiple independent certification audits.
"Egg to Egg" – A Closed Production Cycle
From the healthiest broodstock, reproductive cells are gently collected, and fertilization takes place in carefully controlled conditions. The offspring are then raised either for caviar production or to replenish the breeding population, helping to sustain the global sturgeon population for future generations.
Guaranteed Freshness, Trusted Quality
Every step of the production process is designed with transparency and safety in mind. From raw material selection to the finished product, strict veterinary and sanitary inspections ensure that every tin of PANCAVIAR caviar meets the highest standards. The company does not compromise on taste, texture, or ethical practices—earning it a loyal following among gourmets, chefs, and conscious consumers worldwide.
Experience PANCAVIAR for Yourself
Whether you’re a seasoned connoisseur or discovering caviar for the first time, PANCAVIAR offers an unmatched experience. With a deep respect for nature, a commitment to sustainability, and a passion for excellence, this Georgian producer is redefining what it means to enjoy caviar—pure, ethical, and exquisite.
